A Legacy of Love and Cajun Cooking

The heart of The Cajun Beach starts with Patrick, who spent his childhood growing up between Mississippi and Louisiana. 

Raised along the rivers of Bogalusa, Louisiana and the wild beauty of the Pearl River swamp, 

Patrick was immersed in the traditions and flavors that make Cajun culture so special.


He grew up surrounded by strong southern women who made incredible Cajun and Creole meals straight from the farm 

and land. His great grandmother and grandfather had purchased over 1,000 acres of that land, 

providing the bounty that inspired so much of the family’s cooking.


Like many families of the South, Patrick’s family was taught to live off the land. They hunted, fished and grew their own crops while also raising livestock including cows, chickens, pigs and goats that provided fresh ingredients for every meal.


The family was almost completely self sufficient, rarely needing to visit the store for groceries because everything they needed came straight from the land. From an early age, Patrick learned that everything was made from scratch. Get some eggs, flour, butter, whatever you needed, and make it yourself. Pancakes, cornbread, hearty soups and more were all crafted with time, care and love.


As the years went by, Patrick realized he had a natural gift for cooking. He spent countless hours in the kitchen with his mom, simply watching as she prepared meals. She never wrote recipes down, never measured a thing and always eyeballed every ingredient. 

Patrick just observed because he loved it, watching incredible dishes come to life from scratch.


Over the years, sitting in his mother’s kitchen, watching, helping and being part of the love 

that went into every meal, Patrick grew better and better at cooking.


After his mother’s passing in 2018, Patrick devoted much of his time to perfecting her recipes, 

trying to duplicate the meals she raised him on and honoring her memory through every dish.


In 2023, after years of working in the restaurant business, Patrick finally found the courage to honor his mom Ozella the only way he knew how by opening a place where her love for food and family could live on in every bite. That same year, he opened the very first Cajun Beach Restaurant in Flagler Beach, Florida, continuing to share her made from scratch meals with the world.


Cajun food has always been about flavor, not just spice. That is a common misconception. 

True Cajun cooking is about bringing seasonings together in harmony, creating meals that warm your soul and

 remind you of family dinners made from scratch with fresh ingredients and love.


The entire restaurant is a testament to Patrick’s relationship with his mom, his family and his deep love for food, 

right down to the way you stir a pot, caress the food and love it until it tastes amazing.


Often, you can find Patrick in The Cajun Beach kitchen himself, making a pot of gumbo that takes four and a half hours 

because he never rushes it, cooking it with the same patience, love and care that his mother did.


His mom always told him, “Always cook with your heart.” She believed that when you cook with love, “it’s like the food’s talking to you.” 

Those words stayed with Patrick, shaping the way he approaches every dish to this day.
